Quince
The Quince comes from a deciduous tree and has a similar appearance to a pear but is bright golden yellow when mature. A quince aroma is complex and spicy, with hints of apple, citrus and pear. When cooked it becomes soft and dense, developing a sweet and piquant flavour. Raw quinces have very tough sour flesh. Thus, most quince lovers agree its best cooked and can be used for a compote. It's a good source of vitamin C, dietary fibre, and potassium.
