With bright green husks and plump kernels, corn on the cob is my pick this week. High in potassium and fibre and very versatile, corn is a family favourite. There are many ways to cook corn - boil, microwave, BBQ or roast. Try tossing in chilli, lime juice and some grated parmesan cheese after barbecuing.
